The Super Breakfast Bowl Challenge

Are you ready to get challenged?!? NO … really—are you?! Because we are ready to have some true healthifying blogger fun!!!

So—what’s the dealio with this so called “challenge?”

Okay—here’s the 411.

Five of us nutrition ladies—Jessica at A Fete For Food, Janel at Eat Well with Janel, Elizabeth at Don’t White Sugar Coat It, Lindsey at Healthy Blog Snack, and Corinne at Green Grapes Blog, invite YOU to take the Super Breakfast Bowl Challenge! If you accept, you’ll incorporate a food that typically doesn’t make it onto your breakfast plate or into your usual b-fast bowl—or hey, if you’re really in a jam … your hand or napkin. Simply put, as long as ya eat breakfast within an hour of your rise-n-shine time, incorporate the chosen breakfast item, and send us a pic of your b-fast duds along with its recipe within six days of the highlighted item’s post—you’re good to go and eligible for prizes!!!!!!!!!!

Woo-hoo! Yes, we said prizes.

The Deal

But, before we get on to prizes, let’s talk a lot more nitty-gritty, shall we??? I know—details, details, details…

Starting next week—on February 8th—we’ll each have a day where we’ll post why our ingredient is AWESOME and invite you to use the ingredient in your breakfast within the upcoming week.

The Five Super Breakfast Bowl Challenge Ingredients, Revealed:

    • Pics and recipes needed Sunday, February 14th
  • Flax Seed – Tuesday, February 9th
    • Pics and recipes needed Monday, February 15th

  • Quinoa – Thursday, February 11th
    • Pics and recipes needed Wednesday, February 17th
  • Walnuts – Friday, February 12th
    • Pics and recipes needed Thursday, February 18th

Now, to get clout and be eligible to receive a FAB prize—you’ll need to send a pic of your breakfast item along with its recipe to thesuperbreakfastbowlchallenge@gmail.com within six days of the ingredient’s post date (noted above).

So for example, if I write about the avocado’s awesomeness next Monday, then you have until Sunday to send in a pic of your avocado breakfast goodness! AND—if you win, on Monday, the picture of your breakfast along with its recipe will be posted on ALL of our blogs!

So… Basically…

Each “ingredient post” will appear on each of our 5 blogs and each person who sends in a breakfast pic with the chosen ingredient AND recipe will be eligible for a prize! But … wait, there’s more! The winner—chosen by a random number generator—will be featured on ALL of our blogs along with your name and blog/website name, if ya got one.

Don’t ya love it?!? Cooking experience, health, creativity, great prizes, and free publicity all in one!

The Beautiful Blogger Award!

HOORAY HOORAH! Healthy Blog Snack has been chosen for the Beautiful Blogger Award! But wait – there IS a catch! The rules say I have to share 7 zaney facts about me with ya’ll, and then nominate another 7 bloggers for this fabulicious award. Okay, now time to get down-’n-dirty with these facts:

7 Little Known Facts About Lindsey Toth

  1. I used to want to move to the Caribbean to be a dolphin trainer when I grew up. I was convinced me and my dolphin were going to be the next Flipper. True story.
  2. My belly-button is confused: it’s half inney, and half outey. I used to really want to get it pierced, but figured it already looked weird enough and a piercing would just draw attention to its weirdness. As I grew up and watched all of my friends take out and retire their belly-button rings, I was thankful for my dysfunctional belly-button.
  3. I love writing, and one of my life goals is to write and publish a book. I haven’t decided yet ifLindsey Toth's Published Book - HealthyBlogSnack.com I’m going to write a spicy romance novel or the next revelation in nutrition advice – I guess you’ll just have to wait and see ;-) .
  4. I save brown smooshy bananas in my freezer. The brown ones are the sweetest and make the best banana bread!
  5. One of my favorite hobbies is rock climbing. I love the challenge that indoor climbing walls present. An ideal Saturday for me would be spent sweating it out at an indoor climbing gym, or even better, outside on some real rock.
  6. My newest mindless and guilty pleasure is watching The Jersey Shore L. It just boggles my mind that these people actually exist! And let’s face it, it really is absolutely hilarious.
  7. When I was 18, I spent time in Australia as a volunteer, helping to build a land and wildlife preservation school in order to educate young people on the importance of eco-friendly and sustainable living.

Healthy Blog Snack Awarded as “Over the Top!”

The sun is shining, the leaves are changing, and Healthy Blog Snack has just been honored with the Your Blog is Over the Top! award! Ms. A Fête for Food – Jessica – nominated me for this fabulous award, and I am absolutely thrilled to be receiving it. Thank you Jess!

Terrifyingly Tasty Halloween Treats

I don’t know about your Halloween, but mine turned out to be pretty scary – scary delicious that is!

Well, okay, a little of the normal scary too. I helped to co-host my first Halloween party in my new apartment, and I have to say, decorating was half the fun! We decorated our apartment with eerie red light bulbs, garlands of spooky spider webs, sinister blood spatters (i.e., red rubber), and best of all – our punch was fogging all over the place like real swamp juice – woo hoo dry ice!

In addition to the spooooooky decorations, my roommate Erin and I concocted some equally scary Halloween treats.   Of course in true dietitian fashion, we had to make at least one count towards our guests’ daily intake of whole grains. But not to fear, these spooktastic treats were so delicious, it was frightening…

Mini Mummy Pizzas

Ingredients

1 jar of pizza sauce

½ package of low-fat mozzarella string cheese

12 pitted black olives

1/4 green pepper

1 package of whole grain English muffins

Directions

  1. Cut English muffin in half, and lay on a flat surface
  2. Spread a spoonful of pizza sauce on top of the English muffin half; enough to cover
  3. Pull string cheese into shreds, covering the lower half of the muffin, then covering the top quarter; this leaves a little space between the cheese for the eyes.
  4. Slice the ends off of an olive, discard ends. Cut the olive in half, and place each half on the muffin, to make eyes.
  5. Slice off two small bits of green pepper and place in the middle of each olive half, for pupils.
  6. Voila! Repeat process for a total of 12 mini mummy pizzas.

Nutrition Information

½ muffin: 120 Calories, 6 grams of protein, 3.8 grams of fat, 3 grams of fiber, 16 grams of carbohydrate

Next on the list was dessert:  Krispies of the Corn

Now that we had our whole grains out of the way, we could focus on the good stuff. We crafted up our very own Krispies of the Corn treats using the Original Rice Krispie Treats recipe, a few drops of orange food coloring, and 1 bag of Indian corn – best idea of the night!

Nutrition Information

1 treat: 100 calories, 1 gram of protein, 3 grams of fat, 44 grams of carbohydrate

Last of all came the punch. With a little dry ice and a red, hand-shaped ice-cube, this Swamp Juice came to life! I have to admit, we had a bit of trouble with the original recipe (which wasn’t very tasty), so I’m not going to bother sharing it here. However, there are tons of Swamp Juice recipes online. I particularly like this kid-friendly version – it even comes with swamp creatures!

I know I had promised pumpkins and pumpkin seeds, but by the time we headed to the store for our pumpkins, they were all sold out. Shame on us for waiting until the last minute, but there is always next year! Plus, I think these tasty and terrifying treats make up for it – don’t you???
